One of my all time favourite sweets is ume daifuku・梅大福, this one also has red bean paste. Ume isa Japanese plum and these kind are pickled in sweet vinegar or alcohol for a few months before they are ready to eat. The taste is a little sour and tart but very juicy and sweet. This one from Rabbit Moon・兎月 is just perfect.
